Our youngest vineyards are at least 50 years old, and we have chosen to enhance their age as much as possible.
Wines from old vineyards in fact turn out to be more complex, structured and long-lived : old vines have a much lower yield, but a higher concentration of aromatic compounds, polyphenols and various elements. As a result, tannins are more mature and well integrated, aromatic concentration higher, and tertiary notes emerge more readily during aging.
In addition, the old vines have much deeper roots, making them more resistant and less sensitive to climatic variations and drought and giving the wines more balance.
In a word, wines from old vineyards better express the terroir, as deep roots capture more soil mineral nuances, and offer greater complexity, balance and structure.
To all this we add that our wines contain a particularly high concentration of reveratrol resveratrol and especially of polydatin, due to the naturally higher concentration of polyphenols in the old vineyards, indulged by the cultivation methods and winemaking technique.
Polydatin polydatin (Resveratrolo glucoside) is a biological precursor of resveratrol, and has a greater chemical stability and bioavailability, meaning it is better absorbed by the human body and lasts longer over time.
A higher amount of polydatin in wine results in:
Increased antioxidant properties
Increased resistance to oxidation, which contributes to the longevity of the wine itself
More balanced phenolic profile, which makes the wine less prone to early organoleptic decay.
In conclusion, our wines from old polydatin-rich vineyards represent the perfect balance between tradition, terroir and innovation. In addition to their enological superiority, they offer superior richness of polyphenols and an ability to mature elegantly over time.
